Operation Transformation Week 8: Schezuan Pork Noodles

Serves 2 (Each serving contains approx 410 kcal)



200g cooked pork (leftovers from last night’s dinner)
1 head bok choy, cut into sections
2 scallions, chopped
100g wholewheat spaghetti

Food Staples

2 tablespoons reduced sodium soy sauce
1 tablespoon olive oil
1 teaspoon minced ginger
1 teaspoon Chinese five spice


  1. Add the wholewheat noodles to a pot of boiling water and simmer until cooked for approximately 10 minutes
  2. In a bowl combine the soy sauce, minced ginger and five spice to make the marinade
  3. Add the cooked pork to the bowl and coat with the marinade
  4. Add olive oil to a pan and add chopped scallions and bok choy. Cook until tender for approximately 3- 5 minutes
  5. Add the pork mixture to the pan and cook for 5 – 10 minutes over medium heat
  6. Serve the pork mixture with the noodles
