Pork and Green Beans

Serves 2
Ingredients
2 pork chops, all fat trimmed off (300g)
2 tsp rapeseed oil
1 ½ tsp cornflour
1 tbsp balsamic vinegar
2 ½ tbsp reduced sodium soy sauce
1 ½ tsp rice wine
2 tbsp cold water
400g green beans
1 yellow pepper, deseeded and sliced
1 tsp fresh ginger, grated
1 clove garlic, thinly sliced
¼ tsp chilli flakes
80g wholegrain rice
Method
- Cook the rice according to packet instructions
- In a bowl mix the cornflour with 1 ½ tbsp soy sauce and 1tbsp cold water
- Add the pork and coat with the mixture
- In a separate bowl, combine the remaining soy sauce, vinegar and rice wine
- Add oil to a large pan or wok on high heat and fry the chops for about 2 minutes each side
- Add the ginger, garlic and chilli and fry for 30 seconds
- Add the yellow pepper and green beans and cook over high heat for 5 minutes
- Add water, this will provide a shot of steam
- Add in the soy sauce, vinegar and rice wine mixture and simmer until pork is cooked through
- Serve with rice
