Salmon with Roasted Mediterranean Vegetable

The entire family will enjoy this meal and it is healthy as well
For the roasted vegetables
1 red pepper, deseeded and roughly chopped
1 yellow pepper, deseeded and roughly chopped
2 red onions, sliced
2 courgettes, sliced (optional)
2 sweet potatoes, peeled and roughly diced
250g cherry tomatoes
For the salmon topping
4 salmon darnes
4 tbsp. basil pesto
1 lemon, juice and zest
Salt and black pepper
- Preheat the oven to 190C/fan 170C/gas 5.
- To roast the vegetables, place them in a roasting tray, add a little olive oil and season with salt and black pepper.
- Roast for about 15 minutes before placing the salmon darnes on top of the vegetables, drizzle lemon juice and zest over before spreading the pesto on top. Season with black pepper.
- Bake for about 15 to 18 minutes (depending on the thickness of the darnes) until cooked.
