Exclusive Catherine Fulvio recipe for Londis
This is probably one of my all-time favourite sandwiches! And the more onions on it, the better I think! Of course, chicken can replace the beef for an equally tasty sandwich.
2 x 420g Glenmor sirloin beef
3 large onions, thinly sliced
3 tbsp caster sugar
2 tsp chopped mixed fresh herbs (like rosemary, parsley, chives and thyme)
4 tbsp. sweet chilli sauce
4 tbsp mayonnaise
Iceberg lettuce, washed
3 tomatoes, sliced
4 slices Londis sliced cheese
1 to 2 baguette loaves (depending on size), sliced lengthways
Salt and freshly ground black pepper
- Prepare the lettuce, tomatoes and baguette first. Preheat the BBQ.
- Place the onion, sugar, herbs and some oil in a foil container and place on a low heat on the bbq, sauté until cooked. This will take about 12 to 15 minutes.
- Brush the sirloin with oil and place on the grill, sear each side and cook until your required doneness. Mix the sweet chilli sauce together the mayonnaise.
- Place the meat on a clean plate, cover with foil and leave to rest for 5 to 6 minutes. Slice the steak. Place lettuce, tomatoes and cucumber slices into the bread and place slices of sirloin onto the salad. Place the cheese slice on top, followed by the cooked onions and finally the bread roll top and serve with the sweet chilli mayonnaise.
