One Pot Chicken and Rice

Ingredients

2 chicken fillets, diced
2 tsp plain flour
½ tsp black pepper
2 tsp paprika
1 tsp smoked paprika
1 onion
2 garlic cloves, peeled and crushed
1 yellow pepper, deseeded and cut into chunks
1 green pepper deseeded and cut into chunks
2 carrots, peeled and cut into chunks
500ml chicken stock
2 tbsp tomato puree
100g wholegrain rice
1 tbsp chopped parsley to garnish
1 tbsp rapeseed oil

Method

  1. In a bowl mix the flour, paprika, smoked paprika and pepper
  2. Add chicken and mix so that chicken is coated
  3. Add 2 tsp oil to a saucepan on medium to high heat
  4. Add chicken and cook for 3 – 4 minutes, remove from pot and set aside
  5. Add remaining oil, onion and garlic and sauté for 2 – 3 minutes
  6. Add peppers and carrots and cook for a further 5 minutes
  7. Next add in stock, tomato puree and raw rice
  8. Add back in the chicken, cover and simmer for 20 – 30 minutes until the chicken is completely cooked
  9. Be sure to stir regularly to avoid the rice catching at the bottom of the pan
  10. Garnish with parsley and serve hot
