Paprika Pork Tenderloin with Potatoes

Serves 2


250g pork tenderloin
250g potatoes, peeled
400g green beans
2 garlic cloves,  crushed
1 tsp paprika
1 tsp smoked paprika
3 tsp olive oil
1 tsp butter
25ml low fat milk


  1. Preheat oven to 180C/160C fan / gas mark 4
  2. Add peeled potatoes to a pot of boiling water and simmer until cooked for approximately 15-20 minutes
  3. Once cooked drain water from potatoes and mash with milk and butter
  4.  Combine paprika, smoked paprika and 2 teaspoons of olive oil to make mixture
  5.  Rub mixture over pork, cover with kitchen foil and place in oven for 30 – 40 minutes until cooked through
  6.  Put remaining oil into a pan, add crushed garlic and green beans. Sauté until tender
  7. Take pork out of oven, slice and serve with the mashed potatoes
