Easy Vegetable Fried Rice

This is all you need for a very delicious yet quick midweek meal!


Serves 4


300g stir fry vegetables of your choice, chopped
300g cooked rice
3 eggs
2 tbsp teriyaki sauce
A handful of baby spinach, washed


  1. Heat a large wok with a little oil. Add the vegetables and stir fry for 1 to 2 minutes until just soft. Add the cooked rice and heat through.
  2. Crack the eggs in and quickly whisk through using a fork, to ensure that the eggs are cooked. Then add the teriyaki sauce and the spinach and there you have dinner!
