Operation Transformation Week 1: Spaghetti Bolognese

Serves 2


200g minced beef, extra lean
100g cherry tomatoes, halved
50g canned chopped tomatoes
1 tbsp tomato puree
1 clove of garlic, crushed
1 onion, chopped
1 red pepper, deseeded and sliced
1 green pepper, deseeded and sliced
100g wholewheat spaghetti
2 tsp olive oil
10g basil
½ tsp chilli powder (optional)


  1. In a pot of boiling water, add wholewheat spaghetti and cook for approximately 10 minutes
  2. Add olive oil, chopped cherry tomatoes, tomato puree, canned tomatoes and basil to a saucepan
  3. Simmer on medium heat for 5 – 10 minutes until tomatoes are soft and set aside
  4. Add the mince meat to a seperate pan and cook for several minutes until brown
  5. Drain excess juice from meat
  6. Return pan to the heat and add in the garlic, onion and peppers
  7. Add tomato based sauce and simmer until vegetables are soft for approximately 10 minutes
  8. Remove spaghetti from heat and drain water
  9. Serve spaghetti with the mince and tomato sauce
