Beef Satay

Serves 2


250g beef (leftovers from last night’s dinner)
1 red pepper, deseeded and chopped
150g beansprouts
100g wholegrain rice
1 small onion, chopped
1 tbsp crunchy peanut butter
1 tsp reduced sodium soy sauce
1 tsp hot sauce
½ beef stock cube added to 200ml water


    1. Place wholegrain rice in a pot of boiling water and cook for approximatley 40 minutes until soft
    2. In a bowl combine the beef stock, peanut butter, soy sauce and hot sauce to make satay sauce
    3. Add beef along with satay sauce to a hot pan along with bean sprouts, chopped red pepper and chopped onion
    4. Simmer until vegetables are tender and serve with the wholegrain rice
