
Ingredients:
- 1 cup cherry tomatoes or diced tomato
- 1 cucumber, diced
- 1 ripe avocado, cubed
- ½ red onion, thinly sliced
- 100g feta cheese, crumbled
- Juice of 1 lemon
- 2 tbsp olive oil
- Salt & pepper to taste
Instructions:
- In a large bowl, combine cherry tomatoes, cucumber, avocado, and red onion.
- Drizzle with lemon juice and olive oil.
- Season with salt and pepper.
- Gently toss everything together.
- Top with crumbled feta cheese and serve chilled.
