Summer Sunshine Salad Recipe

Ingredients:

  • 1 cup cherry tomatoes or diced tomato
  • 1 cucumber, diced
  • 1 ripe avocado, cubed
  • ½ red onion, thinly sliced
  • 100g feta cheese, crumbled
  • Juice of 1 lemon
  • 2 tbsp olive oil
  • Salt & pepper to taste

Instructions:

  1. In a large bowl, combine cherry tomatoes, cucumber, avocado, and red onion.
  2. Drizzle with lemon juice and olive oil.
  3. Season with salt and pepper.
  4. Gently toss everything together.
  5. Top with crumbled feta cheese and serve chilled.

Optional Add-ons: Grilled chicken, chickpeas, or croutons for extra crunch.
